So I think that it may be pretty obvious that my favorite bean is the black bean. And I also love foods that go well with tortilla chips (especially the new Tostitos wheat tortilla chips, oh my goodness). This Cumin Chicken recipe from Real Simple incorporates both the black bean AND the ability to use the tortilla chip! This is really good! I will make it again. The only thing I’ll probably do differently is to add some salt to the cayenne pepper & cumin mixture that you rub onto the chicken.
My favorite things (beside the black bean and tortilla chip compatibility) about this recipe are:
- You have to pound the chicken out flat. I love meat mallets!
- This is another quick fix. My daughter sat in the swing and watched me make 89% of this dinner before she started crying. This is good!
- The end result is really colorful–black beans, red tomatoes, yellow corn, green cilantro & scallions, etc.– without requiring a ridiculous amount of chopping. Score!
